This is my favourite dishes too. I really love tomyam and i can even eat it every day! hehe =]

8 freshwater prawns, shelled and deveined with tails intact or you can choose not to shell the prawns - you also can use chicken, meat
150g cuttlefish, cleaned and cut into pieces
2 blue crabs, cleaned and cut into halves
20g galangal
3 stalks lemon grass
12 bird chili
3 roots Chinese parsley
4 tbsps chili paste
6-8 kaffir lime leaves
2 tbsps tomyam cube/paste ( I prefer Knorr's tomyam cube! Really love the taste)
cooking oil
1 cloves garlic, chopped
500ml water (to variety of taste,you can use chicken stock!)
100gm carrots,cut into 5cm lengths
100gm button mushrooms
100g bean sprouts, tailed
100g chives, cut into 4cm lengths

1 tsp salt
3-4 tbsp lime juice
1 tbsp oil
MSG to taste (optional)

Chopped coriander leaves

1.Heat oil and fry garlic with tomyam cube/paste and chili paste. After greasy add water/chicken stock. Boil it for a minute.

2.Smash the galangal and lemon grass slightly. Put them in the boiling pot, add the bird chili, parsley roots. Bring to a boil and add and kaffir lime leaves. Simmer for 10 minutes.

3.Put in all the seafood ingredients,add mushrooms,carrots,beansprouts,chives,bring to a boil until the seafood is cooked. Add in seasoning to taste. Serve hot and garnish with coriander leaves.
